Beef Stir-fry with Broccoli & Quinoa
Ingredients

1 cup Quinoa

2 1/2 cups water

2 tbsp. coconut oil

3 cloves minced garlic

1 tbsp. finely chopped fresh ginger

1 tsp crushed red pepper flakes

3/4 lb grass fed beef, cut into strips or chunks

2 cups mixed vegetables of choice (frozen or fresh)

2 tbsp. low-sodium soy sauce
-
2 tbsp. orange juice

black pepper to taste

Recipe

Put quinoa into a pot with water on high heat. Bring to a boil. Turn heat to low, cover and allow to cook for 16 minutes.

In a stir-fry pan, melt coconut oil on medium -high heat. Stirring often, sauté garlic and red pepper flakes until golden (about 1 minute). Add vegetables (if using frozen vegetables, cook alone until they thaw) and beef. Stir in soy sauce, orange juice and black pepper. Cook until beef is seared and vegetables are crisp (Typically less than 5 minutes).
Serve beef stir-fry over quinoa.
